This special wine is produced from a field blend grown in a small, steep, incredibly rocky site on the north slopes of Mount Etna called Calderara Sottana. The vineyard is located in the oldest existing soils on the slopes where it is possible to grow grapes. The extremely warm temperatures experienced here due to the dark, rocky volcanic soil bring out some of the most intense flavors and structure imaginable. These ancient vines, planted using traditional massal selection techniques are farmed entirely by hand.
The resulting wine is fermented in open vats using only indigenous yeasts for 21 days and then aged for 24 months in large chestnut ovals and older French oak barrels. 2000 bottles were produced.
