100% Chardonnay grown near the estate in Chavot and Epernay. 30+ year old vines. Practicing organic viticulture.
Soils are composed of clay, sand and crushed chalk lying over hard limestone chalk bedrock.
50% from the harvest preceding bottling (currently 2015)blended with 50% reserve wines from the two prior harvests. Partial malolactic fermentation takes place, depending on the harvest, while aging in oak foudres and burgundy barrels with regular stirring of the lees. Bottling and prise de mousse take place in the springtime following most recent harvest.

This is focused and taut, its notes of grapefruit pith, apple and nectarine backed by succulent acidity and a broad, earthy minerality. It shows an excellent balance as a non-dosé, with impressive length and depth on the finish, and overall this feels more harmonious and more expressive than the Ultradition.

The NV Brut Nature Blanc de Blancs marries power with energy to a degree I have not seen before here. In this edition, the Brut Nature is decidedly powerful and broad, with less of the tension seen in some previous releases. It’s as if all the Chardonnay flavors have been turned up to the maximum. Orange peel, apricot, chamomile and spice are some of the many notes that fill out the layers. The current release is based on 2017, with reserve wines from 2016 and 2015, all done in neutral oak. Zero dosage. Disgorged: February, 2020.
