This release is brewed with Hourani, an ancient wheat excavated from the ruins of the ancient fortress of Masada and recently revived in Northern California by Elizabeth DeRuff of Honore Farm & Mill. Elizabeth received a handful of Hourani seeds from Steve Lyon — cofounder of the renowned Bread Lab in Washington State — along with the words: “You’ll know what to do with these.”

Partnering with visionary farms, including the pioneering Full Belly Farm in Capay Valley (an early supplier to Chez Panisse and a leader in the organic movement), Elizabeth and her collaborators brought Hourani back to life. We’re honored to brew with this remarkable grain and to help tell its story through beer.

The Beer

Hourani Pilsner is fragrant and complex, with notes of fresh straw, mint, and exotic spice. On the palate, it’s generous and invigorating, with long length and an energy that feels alive in the glass. You won’t have tasted another beer like it. This one is for the time travelers.
