100% Gamay from 50+ year old vines in Trousselle’s home village of Orches, in the Hautes Côtes de Beaune. De-stemmed fruit is gently macerated and fermented for 15 days before spending a year aging in neutral French oak barrels.
Growers are moving more and more towards the Coteaux Bourguignons AOP for their Gamay grapes where global warming has helped this varietal ripen nicely in the higher elevation vineyards of the Côte d’Or.
The fruit tends to be juicier than when blended into Passetoutgrain cuvées.
