Whole cluster fermentation followed by 10 months in neutral 300L French oak barrels.
Predominately Rufete in this blend backed up by several other mostly indigenous varietals, including some white grapes. The vines here are very old, mostly over 75 years. This single vineyard sits at 900 meters altitude just east of the village, Monforte de la Sierra, pop. 81, near Salamanca. This is an area that receives a significant amount of rainfall, which combined with the altitude, makes for wines with excellent balance.
