Vineyard Notes: 100% Willamette Valley Chardonnay from two top vineyards in the Eola-Amity Hills
50% X Omni Vineyard – 4-year-old mixed clones (15+) picked 9/20/20
50% Seven Springs Vineyard – 7-year-old Dijon 95 picked 9/22/20
Vinification Notes: Whole cluster pressed, the juice for both lots was allowed to brown and was not sulfured. After 24 hours of cold settling on organic yeast hulls, the juice was racked off all solids into stainless tanks. Once ambient yeast fermentation started, the must was racked into older oak with 1g/L tartaric acid. Primary fermentation completed in ten days for Seven Springs and sixty days for X Omni. After malolactic completed in late December, the two barrels were blended in new oak. It aged for 8.5 months in 100% new oak from a 500L Damy Allier Long Light puncheon before being racked off lees into steel for a second winter. Cold stabilized outside in early 2022 and bottle unfiltered on February 11, 2022. Closed with 49x24mm ‘Extra’ Aquitaine Liege punch cork.
Tasting Notes: Demure aromas of lime leaf, grapefruit pith, rosemary and crushed rocks with ginger pastry and truffle butter. Bristling acidity and chalky minerals are subtly enriched by white wood spice, peach pit, candied citrus pith.
