Volcanic & sandy limestone soils. 12 meters elevation.
Spontaneous fermentation on the skins with indigenous yeasts in terra cotta amphorae. 6 month aging on skins in amphorae followed by 2 months in concrete tanks and 3 months in bottle before release.
