Guilhem & Jean-Hugues Goisot, 2015 Bourgogne, Côtes d'Auxerre, Biaumont
Vineyard & soils: From the single vineyard Les Biaumonts vineyard near the village of Saint Bris. Kimmeridgian soil composition (chalky limestone & clay). 250 meters elevation.
35 year old vines.
Production: Hand-harvested. Indigenous yeast fermentation. Aged in neutral Burgundy barrels.
As with all of Goisot’s wines, this is a serious over-achiever. High levels of mineral and earth notes with some floral notes. Gorgeous stone fruit flavors with a saline edge that finishes up long and pristine. This is very classy Bourgogne Blanc that would put most Chablis to shame.
