Produced from grapes harvested with higher maturity levels than Lizières, the bunches are de-stemmed, fermented and macerated on the skins for at least four weeks. Three years of barrel aging follows in 500L neutral oak barrels after which time, the wine is bottle unfined and unfiltered.
This wine shows a medley 0f ripe fruit confit, black olives, figs and sour cherries. backed up by silky but structured tannins and good mineral notes, this is very long, intense and deserves all of the cellar time that one might accord it.
