Tête de cuvée wines from the best vineyards of Avize (Les Champboutons) and Cramant (Les Bionnes). The goal here is to express the terroirs of Avize & Cramant. The soils are very high in chalky limestone which imparts great minerality and finesse in the wine. The average age of vines is 40 years.
Fermentation in 600 liter barrels and stainless steel tanks.
100% malo-lactic fermentation.
Bottled without filtration.
Aged 5 years before disgorging.
Dosage after disgorging: 3g/liter
