Citrus notes melded with white stone fruit aromatics, warm spices, toasted bread and white floral notes. High acid with pronounced saline texture and flavors. Very persistent.

The 2020 Malvasía Volcánica is even lighter and fresher, at 11.5% alcohol with low pH and notable acidity, than the Vijariego Blanco. This fermented with indigenous yeasts in a 2,500-liter oak foudre and 500-liter oak barrels, where it matured with lees for 10 months. Malvasía Volcánica is a natural crossing between Marmajuelo and the Malvasía Aromática, and the wine is floral and perfumed, with a honeyed touch but with a citrus side to it. It has a vibrant palate reminiscent of some young whites from Rías Baixas, with marked acidity and a vibrant, effervescent sensation in the palate. This is medium-bodied, somewhat lighter than the rest. 3,700 bottles were produced. It was bottled in June 2021.
