Dense plantings of 15 distinct clones of Chardonnay being transitioned to organic farming
Planted on a rocky hilltop in Nekia, Gelderman and Jory over volcanic basalt in 2016 on rootstock
Vines spaced 3.5×6 between 475’-515’ with slopes between 2-10%
Vinification Notes: Whole cluster pressed; the juice was allowed to brown for 12 hours before being sulfured. One press cut was made, and the hard press settled separate with no sulfur. After 24 hours of cold settling on organic yeast hulls, the heart was racked off all solids into warming stainless tank with a pied de cuve. Once ambient yeast fermentation started, the must was racked into oak. It was bone dry in 2-3 weeks and malolactic engaged, completing between early November and early January. X Omni Block 5 aged for 11.5 months in 60% new oak from a 500L Damy Exclusive puncheon and 40% second fill oak from a 350L Damy Exclusive puncheon before being racked off lees into steel for a second winter. Cold stabilized and bottled unfiltered on February 11, 2022. Closed with the highest quality 49x25mm ‘Extra’ and 54x25mm ‘Flor’ Aquitaine Liege punch cork.
Tasting Notes: Profoundly complex aromas of ginger, lemongrass, lemon curd, orange oil, almond pastry with hints of acacia, mint, lime leaf, and green mango. Bright acidity, silken texture, and sleek flavors smoothed by a subtle and exceptional white oak spice, finishing long with power and elegance with notes of nectarine, apricot and ginger.
