With this Sardanita PET NAT we go back to a minimal intervention approach, letting nature dictate the fermentation with wild yeasts. The spontaneous fermentation ends in the bottle with no added sulfites, capturing all the pleasant CO2 in a fine, refreshing bead. It’s natural sediment makes the wine cloudy while adding to complexity of flavors.
Medium yellow in color and cloudy with natural fermentation sediment lees. This fresh, crisp wine shows citrus & floral aromas. On the palate, tangy green apple, lemon, elderflower and notes of minerality.
