Enfield Wine Co., 2016 La Femme Sauvage Syrah, California
Vineyards: Brosseau, Richards & Haynes
Vinification: 100% Whole Cluster, partial carbonic maceration. Cool harvest bunches were gently foot-tread once a day through a cold soak & native yeast fermentation. Aged for 11 months in neutral puncheons & barrels. Bottled un-fined and unfiltered with minimal S02.
The carbonic maceration brings some softness and suppleness to counterbalance Syrah’s wild and savory side. Aromas of blood and mushrooms are quickly followed by flowers and a buoyant juiciness. The finish lingers just long enough to leave you wanting more. Expect notes of Chanterelles, violets, grape jelly, sassafras & olive tapenade. This drinks well now, but will benefit from a few years in bottle.
