Clotilde Legrand produces one white wine cuvée from a small parcel which is harvested in two passes through the vineyard. After the first pick, which tends to be fresher and of higher natural acidity, the remaining grapes are left to hang and ripen with more air circulation amongst the bunches. This enables these prized bunches to reach optimum ripeness with minimal risk of rot, offering up the unique nutty, exotic notes that the finest late harvest Chenin wines from the Loire Valley uniquely possess. The two lots are then blended together before aging in the cool limestone cellars.
Pale yellow in color, the nose offers up notes of citrus confit, pear and honey with an exotic edge. In the mouth, the wine seems initially warm and rich with dried fruit and nuts in abundance. These give way to a crisp structure with nice mineral notes and just a hint of sweetness on the back end.
