Freisa is a historically significant varietal in Piedmont that has suffered somewhat in recent times. It has been enjoying a renaissance of late although some producers, like Benito Favaro, have been growing it all along. It is not an easy grape to cultivate and its vinification is event more tricky. In order to extract the subtle nuances, it is very important for the winemaker to use a gentle touch during the fermentation or the wine will go quickly over the edge and become a very rustic, simple wine.
