From vines in Fixin, this Gamay undergoes a 7 day semi-carbonic maceration after foot-treading.
Aged for 7 months in neutral oak and concrete eggs.
Intended to be drunk young and fresh, it is bottled in the spring following harvest.
The tannins are soft and the fruit is lively and exuberant. Serve slightly chilled.
