Schist forms the geological foundation for this single vineyard Chenin with the addition of some clay and gravel.
20+ year old vines
Fermented in stainless steel vat and aged in neutral oak barrels.
The malo-lactic fermentation is allowed to happen as very minimal sulfur is used during the fermentation and aging process. With total sulfur levels well below the norm for “natural” wine, its deft use makes this wine very intriguing.
The nose is of quince and white fruit flowers while the wine shows nice tension and fresh citrus and mineral in the mouth. Very persistent, long and fine with a nice acid/mineral backbone.
